A bread improver helps form a light, airy crumb without sacrificing its “chew” or “toothiness”.
It can also be used in the fermented dough at a lower dosage for making premium bread, buns, rolls etc.
Use 1 to 1 1/2 tablespoons of improver for bread and 2 tablespoons of improver for baked goods you roll out such as pizza dough.
